Chia Pudding with almond milk

My good friend Nora shared this recipe with me when my son was first born. It was so satisfying and delicious…bonus… it’s packed with nutrition as well. This is a simple recipe to make and keep on hand in the refrigerator.

Ingredients

  • 1 cup chia seeds
  • 4 cups unsweetened, plain almond milk or make your own rose almond milk..recipe here.
  • 3/4 cup maple syrup
  • 1 vanilla bean, scraped
  • 1/2 tsp sea salt

Smaller batch:

  • ¼ cup chia seeds
  • 1 cup almond milk

Preparation

  1. Whisk all together in a large mixing bow
  2. Cover and refrigerate 4 hrs or overnight.
  3. Stir to mix and serve with cut seasonal fruit, shredded coconut or sunflower seeds.
